Ingredients
1 lb uncooked lean ground beef (95–97% lean)
1 tsp garlic powder
¾ tsp salt
¼ tsp black pepper
1 tsp dried oregano
1 tsp dried basil
2 cups chopped fresh cauliflower
¼ cup grated Parmesan cheese
4 cups Italian diced tomatoes, blended (or 2 cups low-sugar marinara)
1½ cups reduced-fat shredded mozzarella cheese
2 oz turkey pepperoni slices, divided
Instructions
Step 1: Brown ground beef in a skillet with garlic powder, salt, and black pepper. Drain excess fat.
Step 2: In a bowl, mix cooked beef with oregano, basil, cauliflower, Parmesan, tomato sauce, and 1 oz chopped pepperoni.
Step 3: Lightly grease the slow cooker and add the mixture.
Step 4: Cover and cook on LOW for 4–6 hours.
Step 5: Top with mozzarella and remaining pepperoni. Cover and cook on HIGH for 30 more minutes until melted and bubbly.
